Intuition Wine & Kitchen, Subiaco
Mathieu Wyatt, the founder of Intuition Wine & Kitchen, began his journey with cooking in the sunny South of France, inspired by his mum and grandma. At just 18, Mathieu started his professional career under the mentorship of Chef Patrick Guiltat in Montpellier. His skills flourished in Lyon, the gastronomic capital of France, working alongside Michelin-starred legends such as Christian Têtedoie, Davy Tissot, and Paul Bocuse. After years of refining his skills and gaining valuable experience, Mathieu settled in Australia, spending 7 years as Head Chef at Chez Pierre. Now, he is living his dream by combining his two greatest passions—wine and food—with the launch of Intuition.
Caterlink was thrilled to support Mathieu in bringing his vision to life. Our team transformed the existing kitchen into a highly functional commercial workspace, successfully overcoming challenges such as limited space, delivery access, and the strict requirements of working in a heritage-listed building.
Key project highlights:
- Maximising space: The existing coolroom was removed to create more usable space. In its place, we recommended SKOPE vertical fridge-freezer units as a practical and efficient alternative.
- Optimised equipment selection: By utilising the existing canopy, we carefully selected essential commercial kitchen equipment that met Mathieu’s needs and ensured everything fit seamlessly under the canopy.
- Flexible rental solution: Mathieu opted for our in-house rental solution Rent-it-Today to preserve cash flow, ensuring a smooth transition to his new venture.
Equipment used in this project included:
- Blue Seal cooking by Moffat
- Rational iCombi by Comcater
- SKOPE refrigeration and ice machines
- Meiko dishwashers
- Robot Coupe mixers
- Simply Stainless modular benches
- Carimali coffee machine
