Trio is the latest restaurant of the Trequattrini family, owners of Threecoins Italian Trattoria, on Beaufort Street, Mount Lawley.
Originally from Umbria, Italy, husband and wife Fabio and Sabrina came to Australia with a dream of offering regional Italian cuisine to Perth customers. They opened Threecoins (a transliteration of their surname), with sons Francesco and Luca serving as chefs, daughter Annalisa (Luca’s twin) working as manager and Sabrina making the desserts.
Trio was conceived with the idea of expanding the family tradition of hospitality, providing a different offering for the people of the neighbourhood and expanding the food scene in Mount Lawley.
Its aim is to be the place to go for everything from a take-away coffee on the way to work, a family brunch on Sunday, or a before-or-after-dinner drink.
The name Trio is partly a reference to the family’s lucky number and partly an identity statement of the concept: food + coffee + wine.

Why did they choose Caterlink? The owners of Threecoins had come to us in the past to replace old equipment piecemeal and install some . About six months ago Fabio approached us to design their brand-new restaurant, Trio, located 300 metres further down Beaufort Street. It was to be a new fit-out from scratch, a totally new restaurant, with rustic Italian décor, featuring regional Italian cuisine complemented by their extensive wine collection.
The kitchen was quite tricky to design as the space was not large and Australian health and safety regulations determined that a passageway to the toilets had to be incorporated into the layout of the small rectangle we had to work within.
Another complication was that gas was not available on site, so all devices had to be electric; this was a challenge to the owners as they were used to cooking with gas.
We worked closely with their builder/cabinetmaker to come up with the best layout and install specialist equipment, including a bespoke Eco canopy low-velocity exhaust hood to suit the building’s small duct requirements.
We also installed a Vintec wine cabinet with a capacity of 170 bottles, and twofive-door fridges in the bar area.
The owners took advantage of Caterlink’s(RIT) finance program, renting the equipment they needed which allowed them to focus their capital on building costs and other expenses. RIT enabled them to reduce their capital outlay and invest in other areas of the restaurant.
Trio is open Tuesday to Sunday for breakfast, lunch and dinner.
